Down-home Fideo
If I had to choose one meal that summed up comfort in a bowl,
I'd have to go with fideo. That short, thin macaroni noodle -- lightly browned in oil and then cooked in a simmering tomato broth. It's simple, quick, and tastes like home.
Fideo was a staple in our household growing up. Often times it was served alongside tacos and beans, but every now and then it was served up, just by itself in all it's glory. My grandma made a mean fideo, although looking back - there was probably a bouillon cube involved.
Well, coming off a super busy weekend with a high-energy birthday party behind us, we needed some chicken soup for the soul -- or should I say, fideo soup for the soul. And if we're being totally honest, I hadn't done our market shopping for the week. Fideo it is!
Fideo cooks up super fast, with pantry items readily available. This was a bare bones version -- chicken stock, garlic and a can of tomato sauce. I didn't even have an onion! Yikes! If my grandma only knew....
Fifteen minutes later, coupled with a nutritious green salad -- a satisfying and soulful dinner.
I felt like the monkey in the book, Quiero mas fideos!

It's a Little Lovebug, birthday special (shoes not included). She wanted a twirly, emoji fabric dress. This is what we came up with.
Here's a view from the back. With a full circle skirt, you can get your twirl on with this number! Our shop will be closed this week, as we're taking a little break. We'll be back Monday, October 30, 2017.

1 package cut fideo (or small shells!!)
1 or 2 cloves of garlic(depending on your preference), finely diced or crushed by garlic press
1 can tomato sauce
1 container (32 oz) of chicken stock or broth
1. Lightly brown the fideo in a deep skillet with 1 or 2 tbsp of oil.
2. Add garlic and continue to cook for an additional minute.
3. Add tomato sauce and chicken stock. Season with salt, according to your preference. Bring to boil, then reduce to a simmer for an additional 10 minutes or until the fideo is tender. Fideo will expand as it absorbs the liquid. For a more soup-y consistency, add more water and salt to taste.
** 1/2 an onion and fresh tomatoes also can be added for better results!
