Isn't it the perfect name for a warm muffin fresh out of the oven with a hot cup of coffee in hand? While we're at it, let's throw in ten minutes of silence to catch up on all the newspapers that have accumulated during week on the kitchen table. Now we're talking!! Morning glory, baby!!
These whole wheat morning glory muffins by King Arthur Flour pack a punch, with it's everything-but-the-kitchen-sink ingredient list to back it up. They are packed with shredded carrots, apple, coconut and zucchini!
Whoa. Veggies, anyone?
Ok, it's a true labor of love process, putting these muffins together, but hey -- it's weekend. Go for it. Live a better you, right?
We shredded about 4 small carrots and 1 zucchini, making sure to squeeze out all the excess liquid.
...AND..., juiced several oranges to yield 1/4 cup of fresh OJ. What did I tell you--a labor of love.
Sadly, we omitted the raisins as there were none in the pantry and we skipped the nuts so we can comply with the nut-free, school snacks.
The results --an incredibly moist muffin that is not too sweet and loaded with texture.
We'll be enjoying these all week long...
Into the freezer they go ....

On this glorious morning, we are headed out to one of Berkeley's best-kept secrets.

If you happen to find yourself in the Easy Bay with kids, you may just want to make a stop.
Nestled in the Berkeley marina with beautiful views of San Francisco, upon first glance, you might think it an abandoned junk yard...
with its scraps of wood ...
and tires rolling about...
But truly, it is an amazing hands-on, playground where your Sunday-best is NOT suggested.
Kids are allowed the opportunity to work for tools. Think -- hammers, saws, wood, paint. Eek! Not for the faint of heart.
Kids are encouraged to paint, hammer and saw away....
There are rules on how to earn each tool.
And remember -- eyes on kids, not phones!
As if using a hammer or saw wasn't enough, there's even a kids' zip-line for added fun.
It's Tom Sawyer Island meets Swiss Family Robinson.
Plenty of structures to climb...

2 cups white whole wheat flour
1 c. brown sugar
2 tsp. baking soda
2 tsp. ground cinnnamon
1/2 tsp. ground ginger
1/2 tsp. salt
2 cups grated carrots ** we added a grated zucchini to make 2 cups
1/2 c. shredded coconut
3 eggs
2/3 c. vegetable oil
2 tsps vanilla extract
1/4 c. orange juice
DIRECTIONS
Preheat oven to 375. Lightly grease (or line with papers) muffin tin.
Whisk flour, sugar, baking soda, spices and salt. Set aside.
In separate bowl, mix eggs, oil, vanilla and orange juice.
Add flour mixture to wet ingredients and stir until evenly moistened.
Pour into muffin tin and bake for 25-28 minutes.
